RYOZEKI SHUZO / AKITA PREFECTURE

Ryozeki Shuzo was founded in 1874 and has a brewery in Yuzawa, in the southern part of Akita Prefecture, which is famous for its sake rice. Ryozeki Shuzo was originally a mass-production sake brewery, mainly producing second-grade sake with a maximum of 50,000 goku. As attention began to focus on locally brewed sake and specified name sake (junmai-shu and above) became more popular, Ryozeki Brewery's production dropped year by year and the sense of crisis only grew. With the brewery's survival in jeopardy, Ryozeki decided to give it one last shot at success with "Hanamura".
In 2011, President Takagi of the famous Yamagata sake brewery Jyuyondai provided unprecedented technical guidance and supervised everything from rice selection to brewing, quality control, labels and names. It has become a household name amongst sake connoisseurs nationwide.

HIROKI SAKE BREWERY HONTEN / FUKUSHIMA PREFECTURE

Hiroki Shuzo Honten is located in a place that once flourished as an inn town on the highway linking Aizu and Niigata. Established in the mid-Edo period (1804-30).
 When the brewery was thinking of closing down, a TV interview by NHK (Japan Broadcasting Corporation) brought it to the attention of Koyama Shoten. Gradually, the quality of the sake was improved, and the brewery began trading with that liquor shop from unfiltered, unpasteurised sake, which became very popular. There is a famous episode where the brewer's mother handwrote the labels, as there was no room to print them at the time.
 Mr. Kenji Hiroki (also brewer) believes that once fire-brewed sake is accepted, it will be the real thing, so he has spared no expense in researching fire-brewing techniques and investing in equipment for processing raw materials, and is still aiming for even greater heights.
